For those of you who don't ride, he is reaching over and hitting the kill switch located in the same place on every motorcycle, instantly shutting off the engine. I've wanted to do this ever since I read about GP legend Kevin Schwantz doing it to a motojournalist/wannabe racer who thought he could "take" him, he casually reached over as they were going neck and neck and tapped the poor guys switch. Funny stuff.
