So, a fellow Valkyrie rider, Timbrwolf, has been making homemade chocolate covered brandied cherries for a few years now, he decided to share the family recipe with us.....


"This has been a tradition for me for the last 25 years, and I have never given the recipe out. ...but I am happy to share it with all of you...it is fairly simple to make and the results are outstanding.....so here is a *sweet* little recipe that is a Chili n Timbrwolf Tradition...and maybe it will become one in your family too.. .

~ Chocolate Covered Brandied Cherries

Maraschino Cherries (Stem On)
Drain WELL

Brandy- I used Christian Brothers for 25 years, but since I make such huge batches of em now Im trying J&E Brandy this year because its 3 dollars cheaper....you use what you want.

Chocolate - I use Hersheys Special Dark Chocolate...Ive used this for 25 years and find it works well with the cherries...again..you use what you want...

Drain cherries WELL...place in a bowl and cover with brandy...place Saran Wrap tightly around the bowl ....the origional recipe calls for them to soak overnight...if you want "mild" cherries do it for one night...I let mine soak for two days....my cherries will put a smile on your face after eating 3 or 4 of them :) Smile NOTE - (Do NOT place in the refridgerator...they will soak up more brandy at room tempature)

after they have soaked for the period of time you want...drain them well...place the Saran wrap tightly around the bowl...and place in the freezer....Ideally they should freeze overnight...but if you,re pressed for time...4 hours should do it...(freezing them makes the chocolate stick ALOT better)....melt your chocolate down in a bowl ..on a LOW heat....if youve never done this before...you might want to get your wife to help, as it can be tricky......what I do is fill a pot with an inch or two of water...place a smaller glass bowl in the pot ontop of the water and break up the chocolate in the glass bowl with the heat on low...

....now...what I do is get 4 or 5 paper plates ready...place a sheet of wax paper over each one and stack them up next to the stove where the chocolate is melting....once the chocolate is melted....get the cherries out ...and begin to dip and place them on plates as fast as you can because no matter how low the heat on the chocolate...it will begin to "cook"...and get a a funky consistency...they will still taste good but wont be as pleasing to the eye....I usually wind up with at least one plate of "funky looking cherries" when Im done....

....once youve dipped all yer cherries...I wrap them tightly with Saran wrap and refridgerate them...I also use "Christmas Theme" paper plates so I can give them out as gifts.....

...I gaurantee you will get many compliments on these cherries..........Merry Christmas"

Another tidbit he forgets to mention is the fact you now have some very sweet cherry brandy on hand as well.
